The peach of the designation of origin “Calanda” is an indigenous cultivar from Aragón, very appreciated by consumers and that dominate the late-season fresh market. Currently, it is searched the opening of the trade to market niches far from the origin, for what increasing self-life of this product is pursued. In this work, changes happened during fruit maturity and post-harvest storage at different temperatures were characterized in two late-season varieties of peach with different time of harvest. Relationships between changes in biochemical and molecular parameters that happen during the storage at low temperatures were established. The qRT-PCR analysis showed that genes studied were upregulated or downregulated. Genes studied are potential targets to future research in molecular basis of the chilling injury in peach and, with organoleptics and physicochemical results, it could lead to the development of improved genotypes with high value in terms of nutritional and post-harvest quality
