the creation of healthy food products is the main task of manufacturers. The meat minced products with fruit fillings are designed. The amino acid and fatty acid composition of meat minced products with fruit fillings is studied. The content of essential amino acids in the studied samples is higher in comparison with control samples. Fatty acid composition in the studied samples varies from kind of fruit filling. Apple powder has a good water and fat retention ability. In general, minced meat products meet the requirements for healthy foods.
