Improvement of rheological traits of dough made from winter wheat varieties through breeding | Селекционное улучшение реологических свойств теста сортов озимой пшеницы

英语. The dough rheological traits (DRT) made from winter wheat varieties, which have been developed in the Samara Research Institute of Agriculture in 2006-2015. The soil was black earth (chernozem), medium loamy. The experiment was repeated 4 times. The area of the plots was 25m2. The DRT were estimated according to an average sample of grain under GOST R 51404 – 99. The amount of precipitation in the 1-st decade of July (waxy maturity of kernels) was on lower (1.0-3.4 mm) than the standard amount in 2006, 2010, 2014. In 2009 it corresponded to the norm, but it exceeded the norm 4-5 times in 2007, 2008 (62.6-86.1 mm with the norm of 15 mm). There have been determined high phenotypic variability of such traits as 'dilute of dough' (СV=39–71.3%), 'stability of dough' (СV=56-83.7%) and average phenotypic variability of the trait 'valorimetric assessment' (СV=20.5–29.9%). The dough made from the strong and valuable wheat varieties 'Bezenchukskaya 380' and 'Bezenchukskaya 616' possesses the most stable rheological properties. Under conditions of excessive humidity during the 1-st decade of July (waxy maturity) the trait 'dilute of dough' negatively correlates with the volume of bread (r= - 0.86; Р 0.05) and total assessment of bread (r= - 0.53; Р 0.05). The valorimetric assessment positively correlates with the resistance of dough (r=0.92; P 0.05) and content of protein in kernels (r=0.52; P 0.05). Under insufficient humidity in the period of grain ripening (the period 'flowering-waxy maturity') (as happened in June 2015) the trait 'resistance of dough' positively correlates with content of protein (r=0.59; P 0.01) and gluten (r=0.60; P 0.01) in kernels. The valorimetric assessment positively correlates with the content of protein (r=0.62; P 0.01), content of gluten (r=0.72; P 0.01) and the resistance of dough (r=0.94; P 0.01). The trait 'dilute of dough' negatively correlates with a falling number (r= - 0.44; P 0.05). There have been selected the lines of winter wheat with high DRT, namely moisture absorbing ability of flour (63.5-65.5%), time of dough and its stability (20-28 min), dilute of dough (30-50 farinograph units), valorimetric assessment (97-100 valorimeter units) and baking assessment of bread (4.8-5.0 points).

俄语. В 2006-2015 гг. изучены реологические свойства теста (РСТ) сортов озимой пшеницы, созданных в Самарском НИИСХ. Почва – чернозем обыкновенный среднесуглинистый. Учетная площадь делянок 25 м2, повторность – 4-кратная. РСТ определяли по средней пробе зерна по ГОСТ Р 51404 – 99. Сумма осадков 1-й декады июля (восковая спелость зерна) была ниже нормы в 2006, 2010, 2014 гг. (1,0-3,4 мм), соответствовала норме в 2009 г. и превышала норму в 4-5 раз в 2007, 2008 гг. (62,6-86,1 мм при норме 15 мм). Установлена высокая фенотипическая изменчивость признаков "разжижение теста" (СV = 39 – 71,3%), "устойчивость теста" (СV = 56 - 83,7%); средняя фенотипическая изменчивость признака "валориметрическая оценка" (СV = 20,5 – 29,9%). Наиболее стабильные реологические свойства теста у сорта сильной пшеницы Безенчукская 380 и у сорта ценной пшеницы Безенчукская 616. В условиях повышенного увлажнения 1-й декады июля (восковая спелость) признак "разжижение теста" отрицательно коррелирует с объемным выходом хлеба (r = - 0,86; Р(0,05)) и оценкой хлеба (r = - 0,53; Р(0,05)). Валориметрическая оценка положительно коррелирует с устойчивостью теста (r = 0,92; Р(0,05)) и содержанием белка в зерне (r = 0,52; Р(0,05)). В условиях дефицита осадков в период налива зерна в июне 2015 г. (фаза цветение–восковая спелость) признак "устойчивость теста" положительно коррелирует с массовой долей белка (r = 0,59; Р(0,01)) и клейковины (r = 0,60; Р(0,01)). Валориметрическая оценка положительно коррелирует с массовой долей белка (r = 0,62; Р(0,01)), клейковины (r = 0,72; Р(0,01)) и устойчивостью теста (r = 0,94; Р(0,01)). Признак "разжижение теста" отрицательно коррелирует с числом падения (r = - 0,44; Р(0,05)). Созданы селекционные линии озимой пшеницы с высокими РСТ: влагопоглотительная способность муки – 63,5-65,5%, время образования и устойчивость теста – 20-28 минут, разжижение теста – 30-50 ед.фаринографа, валориметрическая оценка – 97-100 ед.валориметра и хлебопекарная оценка хлеба – 4,8-5,0 баллов.
