Development of the compounding of the cracker from composite flour | Разработка рецептуры крекера из композитной муки

英语. Chickpea flour is a promising component for the development of confectionery products with increased food and biological value. The recipe of a cracker is developed from composite mix of premium wheat flour of t and Krasnokutsky 28chick-pea whole grain flour. The desired mass fraction of chick-pea flour in the composite mix, which does not worsen the organoleptic characteristics of the final product, is 10%. The rheological properties and water absorption capability of the composite flour have been determined by using a Mixolab appliance. It has been revealed that with an increase in an amount of chickpeas flour in the composite mix time of the dough formation reduces and the speed of its dilution rate grows. An analysis of mixsolab-graph indices of the composite mix containing 5 to 50% of chick-pea flour allowed determining the rational ratio of the components (flour derived from wheat and chickpea grain) in the composite flour providing the necessary rheological properties of a dough to prepare crackers: 90 : 10 and 85 : 15. Adding chickpeas flour to the cracker recipe promotes increasing the content of protein and mineral elements in a finished product 1.3 and 1.6 times, respectively. In cracker samples with chickpeas flour the mass fraction of moisture and water absorption increases, as compared to the control sample. Chickpeas flour retains moisture and helps extending the shelf life of cookies. The values "moisture mass fraction" and "water absorption" for cracker samples from composite flour exceed the analogous values for the control sample throughout the storage period.

俄语. Нутовая мука является перспективным компонентом для разработки кондитерских изделий с повышенной пищевой и биологической ценностью. Разработана рецептура крекера из композитной смеси пшеничной муки высшего сорта и цельносмолотой муки из зерна нута сорта Краснокутский 28. Оптимальное содержание нутовой муки в составе композитной смеси, не ухудшающее органолептические показатели готового продукта, составляет 10%. Определены реологические характеристики и водопоглотительная способность композитной муки на приборе Mixolab. Установлено, что с увеличением количества нутовой муки в композитной смеси сокращается время образования теста и увеличивается скорость его разжижения. Анализ индексов миксолабограмм композитной смеси с содержанием нутовой муки от 5 до 50%, позволил определить рациональное соотношение компонентов (муки, полученной из зерна пшеницы и нута) в композитной муке, обеспечивающие необходимые реологические свойства теста для изготовления крекера: 90 : 10 и 85 : 15. Введение нутовой муки в рецептуру крекера способствует повышению содержания белка и минеральных веществ в готовом продукте в 1,3 и 1,6 раза соответственно. В образцах крекера с нутовой мукой наблюдается увеличение массовой доли влаги и намокаемости по сравнению с контрольным образцом. Нутовая мука выполняет роль влагоудерживающего агента и способствует продлению срока хранения печенья. Значения показателей "массовая доля влаги" и "намокаемость" для образцов крекера из композитной муки превышают аналогичные значения для контрольного образца в течение всего периода хранения.
