Comparative assessment of cereals and legumes according to the biological value of grain | Сравнительная оценка зерновых и зернобобовых культур по биологической ценности зерна

英语. The investigation was carried out in 2014–2016 in order to compare the biological value of cereals and legumes, cultivated on the light-gray forest soil of Kemerovo region. We estimated productivity, the content and yield of protein, the amino acid score and biological value of beans (Vicia faba L.) Russkie Chernye and of spring soft wheat (Triticum aestivum L.) Altajskaya 70 and Ekaterina. Fodder beans were better in terms of productivity, protein accumulation and biological value in comparison with spring wheat. Spring wheat was characterized by less stability of its ability to form yield in comparison with beans (V=65.4–85.2% and V=52.5%, respectively). Beans exceeded wheat in protein content; on average over three years of the research the protein content in wheat grain was lower by 11.66% compared to feed beans. The estimation of specific differences in the aminoacid profile of proteins was carried out in the samples of wheat grain and beans, grown under equal agroclimatic conditions. With a general similarity in the qualitative composition of amino acids, there are some specific differences in their quantitative content. Wheat proteins differed in amino acid composition from bean proteins: the content of essential amino acids in the wheat protein is less by 55.9% than in beans. Proteins of beans are especially rich in lysine, isoleucine, leucine, phenylalanine, and valine. The calculation of the amino acid score showed that beans Russkie Chernye met the requirements of the WHO to the fullest extent; they have the high level of protein quality of fodder beans, in which methionine is noted as a limiting essential amino acid, whereas in wheat it is lysine and methionine.

俄语. Исследования проводили в 2014-2016 гг. с целью сравнения биологической ценности бобовых и зерновых культур, возделываемых на светло-серой лесной почве Кемеровской области. Оценивали урожайность, содержание и сбор белка, аминокислотный скор и биологическую ценность бобов (Vicia faba L.) сорта Русские черные и яровой мягкой пшеницы (Triticum aestivum L.) новых сортов Алтайская 70 и Екатерина. Продуктивность, накопление белка и биологическая ценность кормовых бобов были выше, чем у яровой пшеницы. У яровой пшеницы отмечена меньшая стабильность способности формирования урожайности (V=65,4-85,2%), по сравнению с бобами (V=52,5%). В среднем за 3 года исследования содержание белка в зерне пшеницы было ниже, чем в кормовых бобах, на 11,66%. При общем сходстве в качественном составе аминокислот обнаружены видовые различия в их количественном содержании. Содержание незаменимых аминокислот в белке пшеницы было меньше, чем в бобах, на 55,9%. Белки бобов особенно богаты лизином, изолейцином, лейцином, фенилаланилом и валином. Расчет аминокислотного скора показал, что в наибольшей степени требованиям ВОЗ соответствовали бобы Русские черные, имеющие высокий уровень качества белков, у которых лимитирующей незаменимой аминокислотой оказался метионин, а у пшеницы – лизин и метионин.
