Stabilization of coloring substances in the composition of inclusive nanocomplexes based on starch products | Стабилизация красящих веществ в составе инклюзионных нанокомплексов на основе продуктов переработки крахмала

英语. The stability of beta-carotene (BC) in nanocomplexes with cyclodextrins and modified starches has been studied. Alpha- and beta-cyclodextrins (ACD and BCD), native, and modified starches with a degree of hydrolysis from 30 to 46% were studied as modifier carriers. The inclusion complexes were obtained by the solid phase method. The stability of BC was determined under conditions of sample storage at the temperatures of (3 ± 2) and (–23 ± 2) deg. C, and aqueous solutions of samples at the temperature of (3 ± 2) deg. C. The color intensity of the sample solutions was determined by the optical density measured at the maximum of the light absorption on Shimadzu UV-1800 two-beam scanning spectrophotometer with the spectral range of 190–1100 nm. At the temperature of (–23 ± 2) deg. C the content of the coloring matter in the BC sample and in the samples of the complexes obtained on the basis of all carriers is stable for 4 months of observation. Under conditions of storage of samples at the temperature of (3 ± 2) deg. C modified starches and cyclodextrins with a 1:1 molar ratio have the greatest stabilizing effect on BC. The stability of the coloring substance in aqueous solutions of complexes derived from BC and BCD is almost thirty times greater than the stability of an aqueous solution of beta-carotene emulsion. Best results are obtained for complexes with the molar ratio of beta-cyclodextrin to beta-carotene in the range from 1:1 to 2.5:1. The stabilizing effect of ACD is weaker. Losses of 50% of the coloring substance in this case are observed during storage for 40 to 70 days, depending on the molar ratio of the components in the complex. Solutions of ACD-based complexes are less intensely colored. They contain 3 times less beta-carotene than in complexes based on BCD. The greater lability and lower BC content in samples derived from ACD can be explained by the smaller size of its internal cavity, then, fewer BC molecules are incorporated into the structure of the supramolecule. The formation of supramolecular structures was confirmed by 1H NMR spectroscopy. Supramolecular complexes based on BC can be widely used in various fields of science and industry.

俄语. Изучена стабильность бета-каротина (БК) в нанокомплексах с циклодекстринами и модифицированными крахмалами. В качестве носителей-модификаторов были исследованы альфа- и бета-циклодекстрины (АЦ и БЦ), нативный и модифицированные крахмалы со степенью гидролиза от 30 до 46%. Комплексы включения получали твердофазным способом. Стабильность БК определяли в условиях хранения образцов при температурах (3 ± 2) и (–23 ± 2) град C, а водных растворов образцов при температуре (3 ± 2) град C. Интенсивность цвета растворов образцов определяли по оптической плотности, измеряемой в максимуме светопоглощения на двулучевом сканирующем спектрофотометре Shimadzu UV-1800 со спектральным диапазоном 190–1100 нм. При температуре (–23 ± 2) град C содержание красящих веществ в образце БК и в образцах комплексов, полученных на основе всех носителей, стабильно в течение 4 мес. наблюдения. В условиях хранения образцов при температуре (3 ± 2) град С наибольшее стабилизирующее действие на БК оказывают модифицированные крахмалы и циклодекстрины с молярным соотношением 1:1. Стабильность красящих веществ в водных растворах комплексов, полученных на основе БК и БЦ почти в 30 раз превышает стабильность водного раствора эмульсии БК. Лучшие результаты получены для комплексов с молярным соотношением БЦ : БК в диапазоне от 1:1 до 2,5:1. Стабилизирующее действие АЦ менее выражено. Потери 50% красящих веществ в этом случае отмечаются при хранении от 40 до 70 суток в зависимости от молярного соотношения компонентов в комплексе. Растворы комплексов на основе АЦ имеют менее интенсивную окраску. В них содержится в 3 раза меньше БК, чем в комплексах на основе БЦ. Большую лабильность и более низкое содержание БК в образцах, полученных на основе АЦ, можно объяснить меньшим размером его внутренней полости, в результате чего меньшее число молекул БК включается в структуру супрамолекулы. Образование супрамолекулярных структур подтверждено методом ЯМР 1Н спектроскопии.
