In Serbia, an average annual milk production is 1.5 billion liters. Small family households dominate in milk production, while high capacity dairies dominate in milk processing. They participate with 80% in the total production of dairy products, while small dairies process about 20% of milk. In this race small dairies are lagging behind. The subject of this paper is the economic characteristics of yogurt production in small capacity dairies in Serbia. The research showed that the cost price of yogurt is 72.39 RSD/kg. The largest share in total costs is costs of raw materials account for 40.63% and labor costs for 36.95%. Small capacity dairies, in addition to other factors, have to pay attention to reducing production costs in order to improve their competitive position on the market, especially in relation to high-capacity dairy farmers.
