Study of accumulation of fermentation products during making silage and haylage of alfalfa in conditions of spontaneous fermentation and the use of preserving preparation | Исследование накопления продуктов ферментации в процессе сенажирования и силосования люцерны при спонтанном брожении и применении биоконсерванта

Studied was the dynamics of the accumulation of fermentation products (ammonia, sugar and fermentation acids) in the process of making silage and haylage of prewilted alfalfa (PA) in conditions of spontaneous fermentation and the use of the preserving preparation "Biotroph" (BT). The fermentation dynamics was studied during ensiling of alfalfa prewilted to a dry matter (DM) content of 39.9 and 52.5% in the usual way and with the BT preparation created on the basis of the osmotolerant strain of Lactobacillus plantarum No. 60 With the applying of BT, pH of dried alfalfa (39.9% DM) already after 3 days of silage reaches a value of 4.6, limiting the development of butyric acid bacteria. However, this did not prevent the accumulation of butyric acid (BA). A negative correlation was found between pH of feed and the accumulation of BA (r=-0.79, P less than 0.05). Ammonia accumulates in the first week of silage, after which its content is stabilized. In conventional silage, due to the slow increase in active acidity, ammonia accumulates throughout the storage period. Lucerne haylage (52.5% DM) under the influence of BT acidified slower, but the pH in it can reach a value of 4.2. This is due to the fact that in the lactic acid fermentation process involves also malic acid, which is formed in large quantities in the PA. Despite the difference in acidification of common haylage and haylage with inoculated lactic acid bacteria, the accumulation of BA in the latter case was significantly higher (P less than 0.05). The difference in the content of BA was exhibited after 15 days of preserving alfalfa with BT, when the pH of the feed reaches a value that is critical for BA bacteria. A negative relationship was found between the pH level of haylage and the amount of BA produced (r = -0.84, P less than 0.05). The accumulation of ammonia in both haylage was almost the same. The accumulation of ammonia in the dry matter of the usual haylage and prepared with BT was almost the same and corresponded to its content in the dry matter of silage from PA (39.9% DM) with BT. Concluded is that the accumulation of a certain amount of BA in alfalfa haylage (52.5% DM) prepared without additives and with BT, and in PA silage (39.9% CB) with BT, can be disregarded.

Изучали динамику накопления продуктов ферментации (аммиака, сахара и кислот брожения) в процессе сенажирования и силосования провяленной люцерны (ПЛ) при спонтанном брожении и применении биоконсерванта. Динамику брожения изучали при силосовании люцерны, провяленной до содержания сухого вещества (СВ) 39,9 и 52,5% обычным способом и с препаратом Биотроф (БТ), созданным на основе осмотолерантного штамма Lactobacillus plantarum № 60. При внесении БТ рН ПЛ (39,9% СВ) уже через 3 сут достигает значения 4,6, ограничивающего развитие маслянокислых бактерий, однако это не предотвратило накопления масляной кислоты (МК). Выявлена отрицательная корреляция между рН корма и накоплением МК (r=-0,79, P меньше 0,05). Аммиак накапливается в 1-ю неделю силосования, после чего его содержание стабилизируется. В обычном силосе аммиак накапливается в течение всего срока хранения из-за медленного повышения активной кислотности. Люцерновый сенаж (52,5% СВ) под влиянием БТ подкислялся медленнее, но и в нём рН может достичь значения 4,2. Это объясняется тем, что в процесс молочнокислого брожения вовлекается и яблочная кислота, в большом количестве образующаяся в ПЛ. Несмотря на разницу в подкислении обычного и инокулированного БТ сенажа, накопление МК в последнем было выше (P меньше 0,05). Разница в содержании МК проявилась после 15 сут сенажирования люцерны с БТ, когда рН корма достигает значения, критического для маслянокислых бактерий. Определена отрицательная зависимость между рН сенажа и количеством образовавшейся МК (r=-0,84, P меньше 0,05). Накопление аммиака в СВ обычного и приготовленного с БТ сенажа было практически одинаковым и соответствовало его содержанию в СВ силоса из ПЛ (39,9% СВ), приготовленного с БТ. При сенажировании ПЛ (52,5% СВ) обычным способом и с препаратом БТ и её силосовании в провяленном виде (39,9% СВ) с БТ, накопление некоторого количества МК можно не принимать во внимание.
