英语. Wheat bran is the main co-product of the milling industry, resulting from the transformation of wheat grains into flour or semolina. It represents the outer layer of the grain containing various tissues; mainly pericarp, testa and aleurone. Wheat bran is produced every year in considerable quantities and is mainly used for animal feed. However, given its nutrient composition and availability, it could also be used for human food. Several studies have shown the beneficial effect of wheat bran consumption on human health, particularly in reducing the risk of obesity, cardiovascular disease, diabetes and others.Ferulic acid (FA) (-cis and -trans) and its dimers (8,5′-diFA, 8,5 ′- benzo-diFA, 8-O-4'-diFA and 5,5'-DiFA) account for about 95% of the phenolic acids in wheat bran, concentrated mainly in the aleurone layer and the pericarp. FA is known for its antioxidant, anti-microbial and anti-inflammatory properties. It is also able to be transformed into aromatic derivatives such as vanillin or 4-vinylguaiacol in the presence of microorganisms. In connection with the bakery industry, the main objective of this phD work is to study the effect of certain practices on the content of FA and its derivatives in bran and/or bread. The study of the variations in FA content from wheat to bread showed an effect of terroir and wheat varieties on the FA content of bran as well as an effect of the type of ferment on the FA content of bread. In a synthetic fermentation medium, the behavior of FA was studied in the presence of sourdough yeasts and lactic acid bacteria, alone or in combination. We found that FA metabolism varied among strains and that yeast/bacteria interactions had an effect on the consumption and conversion of FA. Indeed, the transformation of FA into dihydroferulic acid is favored in co-cultures compared to monocultures, to the detriment of the production of 4-vinylguaiacol. Overall, our results clarify the evolution of FA from grain to bread by highlighting the important role of fermentation microorganisms and their interaction in its transformation, and are discussed in view of their interest in baking.

法语. Le son de blé est le coproduit principal de l’industrie meunière, résultant de la transformation des grains de blé en farine ou en semoule. Il représente l’enveloppe extérieure du grain renfermant différents tissus ; dont principalement le péricarpe, la testa et la couche d'aleurone. Le son de blé est produit chaque année en quantités considérables et destiné principalement à l’alimentation animale. Toutefois, compte tenu de sa composition en éléments nutritifs et de sa disponibilité, il pourrait également servir pour l’alimentation humaine. Plusieurs études ont montré l’effet bénéfique de la consommation du son de blé sur la santé humaine, notamment en diminuant les risques d’obésité, des maladies cardiovasculaires, du diabète et autres.L’acide férulique (AF) (-cis et -trans) et ses dimères (8,5′-diFA, 8,5 ′- benzo-diFA, 8-O-4'-diFA et 5,5'-DiFA) présentent environ 95% des acides phénoliques du son de blé, concentrés principalement dans la couche aleurone et le péricarpe. L’AF est connu pour ses propriétés anti-oxydantes, anti-microbiennes et anti-inflammatoires. Il a également la capacité de se transformer en dérivés aromatiques tels que la vanilline ou le 4-vinylguaiacol, en présence de microorganismes. En lien avec la filière boulangerie, ce travail de thèse a pour objectif principal d’étudier l’effet des pratiques sur le contenu en AF et ses dérivés dans le son, les pâtes et/ou le pain. L’étude des variations de contenu en AF du blé au pain a montré un effet du terroir, et des variétés de blé sur le contenu en AF du son ainsi qu’un effet du type de ferment sur le contenu en AF des pains. Dans un milieu levain modèle, le comportement de l’AF a été étudié en présence de levures et de bactéries lactiques provenant de levains, seules ou en combinaison. Nous avons montré que le métabolisme de l’AF dépend des souches et que les interactions levures-bactéries avait un effet sur la consommation et la transformation de l’AF. En effet, la conversion de l’AF en acide dihydroférulique est favorisée en co-cultures par rapport aux monocultures, au détriment de la production de 4-vinylguaiacol. Globalement, nos résultats clarifient le devenir de l’AF de grain jusqu’à pain en mettant en évidence le rôle important des microorganismes fermentaires et de leur interaction dans sa transformation, et sont discutés au regard de leur intérêt en boulangerie.
