Vegetable preferences of Australians and Koreans

The overall acceptability and sensory attributes of 6 vegetables produced in Australia were assessed by Australian and Korean panellists. The results indicated that the two groups of panellists ranked the acceptability of the vegetables similarly, with canned beetroot the most acceptable and raw beetroot and brussel sprouts, the least acceptable. However, substantially more Australians than Koreans gave 'dislike' scores for broccoli stems and florets, and chokos, whilst Koreans gave similar or higher numbers of 'liking' responses than Australians for most of the sensory attributes measured. It is concluded that with the exception of raw beetroot, all of the products could find a market in Korea
