Coloration and light importance for anthocyanin development of cv. Irwin mango fruit

The occurrence of pigments and the effect of bagging on the coloration of cv. Irwin mango fruit were investigated. The pigments in the skin of ripe fruit consisted of anthocyanin, carotenoid and chlorophyll. The carotenoid, distributed evenly all portions of the skin, showed yellow ground color. The anthocyanin accumulated more at stem end portion than at styler end one. Only small amount of chlorophyll remained. The correlation was found between the anthocyanin and sugar content in the skin. Two distinct anthocyanin pigments were analysed with HPLC.When the fruits were bagged for 4 weeks before harvest. the anthocyanin content decreased. However, red pigments developed well in the skin of fruits bagged for 2 weeks and then exposed to sunlight for 2 weeks. Sunlight for more than 2 weeks before harvest seems to be required for the red coloration. The carotenoid content was not affected by the bagging treatments.
