俄语. Цель исследования - изучить биохимический состав и пищевую ценность муксуна (Сoregonus muksun (Рallas)), выловленного в нижнем течения р. Лена. Муксун - ценная промысловая рыба, в р. Лена добывается 90% от его общего вылова по Якутии, в остальных реках численность низкая и продолжает сокращаться в результате чрезмерного вылова. Ежегодный вылов муксуна в Якутии в среднем составляет 450 т, общие допустимые уловы – 510-590 т. Для исследования были отобраны рыбы осенне-зимнего улова 2013 г., быстро замороженные при t -30 град. C и далее хранившиеся в морозильных камерах при t не выше – 15 град. C. Отбор и формирование проб проводили в соответствии с действующими стандартами. Тушки перед исследованием размораживали при комнатной температуре, мышечную ткань брали из спинной и брюшной частей рыбы. Установлено, что по количеству белков (15-20%) филе и тешу муксуна можно отнести к белковым продуктам. Содержание белков в филе составило 16,05±0,003%, в теше – 18,72±0,009%. По содержанию жиров в теше (22,67±0,009%) муксун относится к особо жирным сортам рыб (более 15%). По питательной ценности муксун является высококалорийным продуктом питания (более 200-300 ккал/100 г). Белки филе и теши муксуна обладают высокой биологической ценностью, так как содержание всех незаменимых аминокислот (кроме цистина) в них в 1,0-5,3 раза больше, чем в идеальном белке. Проведенные исследования дают основание отнести мясо муксуна к качественному и хорошо сбалансированному пищевому продукту.

英语. The biochemical composition and nutritional value of muksun (Coregonus muksun (Pallas)), which were caught in the lower reach of the Lena river were explored. Muksun is a high value commercial fish. About 90% of the total fish yield in Yakutia is caught in the Lena river. the muksun population in other rivers is low and it continues to decline as a result of overfishing. The annual muksun catch in Yakutia is in average of 450 tons, the total allowable catches are 510-590 tons. Fish of the 2013 autumn-winter catch, quickly frozen at -30 deg. C (further storing in deep freezers at not higher than -15 deg. C) were selected. The selection and samples forming were done by present standards. Before the research starting carcasses were defrosted at room temperature, muscle tissue was taken from the dorsal and abdominal parts of the fish carcass. It was found that muksun fillets and belly can be attributed to the protein products by the amount of proteins (15-20%). The protein content in the fillets was 16.05 ± 0.003%, in belly - 18.72 ± 0.009%. According to the fat content in the belly (22.67 ± 0.009%) muksun belongs to the especially fatty fish class (fat content is more than 15%). In terms of nutritional value muksun is a high-calorie food product (it contains more than 200-300 kcal/100 g). The muksun fillets and belly proteins have a high biological value, because the content of all essential amino acids in them (except cystine) is 1.0-5.3 times higher than in the pure protein. The researches presented have showed that the muksun meat can be classified as a high-quality and well-balanced food product.
