Determination of antimicrobial properties of chitosan-based edible films enriched with thyme essantial oil

Chitin is the second most abundant natural biopolymer obtained from skeletons of crustaceans (crab shrimp etc.) in nature. Chitosan is deasetilated form of chitin. Chitosan has been proved to be nontoxic, biodegradable, biocompatible and have antimicrobial charateristics. In this study, the antimicrobial activities of the chitosan-based edible films with different molecular weights and the chitosan-based edible films enriched with tyhme essential oil were determined by agar diffusion test. It was determined that the chitosan-based films with different viscosities did not show antimicrobial activity against Escherichia coli, Listeria monocytogenes, Staphylococcus aureus, Aeromonas hydrophila and Lactobacillus acidophilus; however, the chitosan-based edible films enriched with tyhme essential oil showed significant antimicrobial activity against the selected bacterias except for L. acidophilus.
