The aim of the work is to develop a recipe and technology for a concentrated dairy product with a 10-20% share of replacing skimmed milk powder with whey protein concentrate and a 5-10% share of replacing sucrose with American artichoke syrup. The product has been developed according to the developed recipe and its physical and chemical quality indicators have been determined. It has been found that the indicators are similar to the quality indicators of the traditional sweetened condensed milk. For example, the viscosity of the product does not exceed the values for the traditional sweetened condensed milk regulated by Technical Regulations of the Customs Union 033/2013. The average linear size of the crystals increases during storage both in the control and in the working samples. However, this indicator is lower by 20-25% in the working sample, thus improving the product quality. Water activity is a complex indicator of the storage stability of canned milk. It has been found that in all samples this indicator is by 3-7% lower than in the control sample. This fact proves a sufficiently high storage stability of the manufactured products and a high preservative effect of the mixture of sucrose and American artichoke syrup. American artichoke syrup allows enriching the product to the greatest extent in potassium, sodium, calcium, magnesium and phosphorus, as well as in vitamins B, A, C and E. The addition of whey protein concentrate to the product increases its biological value. It has been found that the balance coefficient of the amino acid composition in the working sample is by 18% higher than in the control sample.

Цель работы - разработка рецептуры и технологии концентрированного молочного продукта с 10‒20%-ной долей замены сухого обезжиренного молока на концентрат сывороточных белков и 5‒10%-ной долей замены сахарозы на сироп топинамбура. По разработанной рецептуре был выработан продукт и определены его физико-химические показатели качества. Установлено, что эти показатели в основном находятся в соответствии с аналогичными показателями качества традиционных сгущенных молочных консервов с сахаром. Так, например, вязкость продукта не превышает значений, регулируемых ТР ТС 033/2013 на традиционное сгущенное молоко с сахаром. Средний линейный размер кристаллов возрастает в процессе хранения, как в контрольном, так и в рабочем образцах. Однако в рабочем образце он ниже на 20-25%, что улучшает качество продукта. Активность воды является комплексным показателем хранимоустойчивости молочных консервов. Как было установлено, во всех образцах этот показатель был ниже на 3-7%, чем в контрольном образце. Это свидетельствует о достаточно высокой хранимоустойчивости вырабатываемых продуктов и о высоком консервирующем эффекте смеси сахарозы и сиропа топинамбура. Введение в продукт сиропа топинамбура позволяет в наибольшей степени обогатить продукт калием, натрием, кальцием, магнием и фосфором, а также витаминами В, А, С и Е. Введение в продукт концентрата сывороточных белков повышает биологическую ценность. Установлено, что коэффициент сбалансированности аминокислотного состава в рабочем образце на 18% выше, чем в контрольном.
