Development of a cracker recipe of increased nutritional value | Разработка рецептуры крекера повышенной пищевой ценности

There has been developed a recipe for a cracker (CR) of higher nutritional value by partially replacing wheat flour with buckwheat flour and adding semi-hard cheese to it. 3 experimental samples of CR (CR1-CR3) were prepared. The content of wheat and buckwheat flour in CR1, CR2 and CR3 was 160 and 40, 140 and 60, 120 and 80 g, respectively. Cheese, water, vegetable oil, and salt were added to the formulation of CR1-CR3 in an amount of 150, 60, 20 and 15 g, respectively. Cheese was added to the CR dough at the stage of its kneading, grinding it into particles no larger than 2 mm in size, which made it possible to improve the plasticity of the dough, to increase its protein content and to improve the quality of the finished products. Organoleptic evaluation of the finished CR showed that CR3 had maximum score (5 points) for all the indicators determined (taste, odor, color, consistency, surface pattern and form), and the mass fraction in it of moisture and fat (4.36 and 18%), as well as the wettability of finished products (151%) met the target standard. The experimental sample of CR3 exceeded the control sample of CR (traditional formulation) in caloric content, mass fraction of fat and protein, dietary fiber, vitamins, minerals and fatty acids, but was inferior in carbohydrate content. The conclusion is made that the introduction of buckwheat flour, semi-hard cheese and vegetable oil in the indicated quantities can increase its nutritional value.

俄语. Разрабатывали рецептуру крекера (КР) повышенной пищевой ценности за счет частичной замены в его составе пшеничной муки на гречневую и введение в его состав сыра полутвердого. Готовили 3 опытных образца КР (КР1-КР3). Содержание пшеничной и гречневой муки в КР1, КР2 и КР3 составляло 160 и 40, 140 и 60, 120 и 80 г соответственно. Сыр, воду, растительное масло и соль в рецептуру КР1-КР3 вводили в количестве 150, 60, 20 и 15 г соответственно. Сыр вводили в тесто КР на стадии его замеса, измельчая его до частиц размером не более 2 мм, что давало возможность улучшить пластичность теста, повысить содержание в нем белка и улучшить качество готовых изделий. Органолептическая оценка готовых КР показала, что КР3 имел максимальные оценки (5 баллов) по всем определяемым показателям (вкус, запах, цвет, консистенция, характер поверхности и форма), а массовая доля в его составе влаги и жира (4,36 и 18%), а также намокаемость готовых изделий (151%) соответствовали требованиям целевого стандарта. Опытный образец КР3 превосходил контрольный образец КР (традиционная рецептура) по калорийности, массовой доле жира и белка, пищевых волокон, витаминов и минеральных в-в, но уступал по содержанию углеводов. Сделан вывод, что введение в рецептуру КР гречневой муки, полутвердого сыра и растительного масла в указанных количествах позволяет повысить его пищевую ценность.
