VETERINARY AND SANITARY EXAMINATION OF WILD DUCKS OF THE REPUBLIC OF SAKHA (YAKUTIA)

Due to the annual increase in wild duck production in the regions of the Republic of Sakha (Yakutia), there is a need for adetailed study of wild bird meat to assess its quality in order to preserve health of the population. The research was carried outon wild ducks caught in the autumn period in Ust-Aldan district,Tattinsky district, and Megino-Kangalassky district of theRepublic of Sakha (Yakutia). According to the results of an organoleptic study of mallards of group 1, carcasses of meat arecategory 1, while the mallards of group 2 had changes in quality related to category 2. According to the results of peroxidasestudies, mallard meat of group 2 was classified as meat of questionable freshness. According to the results of studies on aminoammonia nitrogen, mallard carcasses of group 2 showed negative results. The content of amino-ammonia nitrogen in the carcass of the 1 group mallard was 1.12 mg, the carcass of the European wigeon - 1.2 mg, the carcass of the northern shoveler- 1.3 mg, and in the white-winged scoter - 1.22 mg, it was found that the carcasses comply with GOST regulatory documents.In mallard carcasses of group 2, the meat corresponds to meat of questionable freshness. In the course of the study with coppersulfate, samples from the carcasses of mallard ducks of group 1, European wigeon, northern shoveler and white-winged scoterwere transparent, while the broth of the mallard carcass of group 2 was cloudy with flakes, which indicates stale duck meat.According to the results of the study, the pH value in the carcass of the group 1 mallard was -6.12 mg, the carcass of Europeanwigeon - 5.9 mg, the carcass of northern shoveler - 5.87 mg, and the carcasses of the white-winged scoter - 6.2 mg, whichcarcasses comply with the normative and technical indicators of GOST. And in the carcass of the group 2 mallard, the pHindicator was 6.6 mg, which indicates meat of questionable freshness. Studies veterinary andsanitary examinations to fishingducks produced in the regions of the Republic of Sakha (Yakutia), from which the authors establish that the carcasses of thegroup 2 Mallard duck obtained in Ust-Aldan district, in connection with long-term storage, are in the category of thequestionable freshness of meat.
