Buckthorn in food industry.

Buckthorn culture was studied for its use in the food industry. Various forms of buckthorn grown in Eastern Georgia were selected for the experiment. All the tested form were found to have high content of total sugar, titratable acidity,vitamin C and trace elements. Out of the selected forms of buckthorn two types of products (shredded buckthorn with sugar and buckthorn in own juice) were made. According their organoleptic and commercial qualities, these products meet the current standard requirements and are recommended for commercial production
