Evaluation of the impact of commercial pig crossbreeding on meat quality | Оценка влияния промышленного скрещивания свиней на качество мяса

俄语. Изучали влияние межпородного скрещивания свиней на показатели качества мышечной ткани. Научно-хозяйственный опыт проведен в условиях свинокомплекса ООО "Алтаймясопром" Тальменского района Алтайского края в 2017 г. на свиньях ирландской селекции: (1-я контрольная группа) – порода ландрас (Л). Во 2-й опытной группе маток крупной белой породы (КБ) закрепляли за хряками породы ландрас. В 3-й опытной группе проводили скрещивание по схеме: Л x КБ. В 4-й опытной группе помесных маток (КБ x Л) осеменяли спермой хряков крупной белой породы. Пробы мышечной ткани отбирали над 9-12-м грудными позвонками. Отмечена тенденция к повышению влагосвязывающей способности мышечной ткани в процентах к мясу в опытных группах на 0,3-2,4%. Влагосвязывающая способность мышечной ткани в процентах к общей влаге в 4-й опытной группе была выше, чем в контроле, на 6,3% (р меньше 0,05). Более высокое содержание жира отмечено во 2-й и 4-й опытных группах, что больше, чем в контроле, на 2,4-2,8% (р меньше 0,001). Наименьшая доля жира была выявлена в мясе свиней породы ландрас (3,7 ± 0,15%) и помесей Л x КБ (3,7 ± 0,15%). По содержанию белка и золы значимых межгрупповых различий не получено. Молодняк 2-й и 4-й опытных групп имел тенденцию к увеличению калорийности мышечной ткани на 23,0-25,6 ккал (+19,0-21,2%) в отличие от чистопородных сверстников.

英语. The influence of interbreeding of pigs on the quality of muscle tissue was studied. The experimental studies were carried out on the pig farm of the LLC "Altaymyasoprom", the Talmenskiy District of the Altai Region in 2017 in the pig herd of Irish breeding. The 1st (control) group was formed of Landrace (L) pigs. In the 2nd (trial) group, Large White sows (LW) were crossbred with Landrace (L) boars. In the 3rd (trial) group, the crossbreeding pattern was as follows: L x LW. In the 4th (trial) group, crossbred sows (LW x L) were inseminated with LW boar semen. Muscle tissue samples were taken above the 9th and 12th thoracic vertebrae. There was a tendency to increase the moisture binding capacity of muscle tissue as a percentage of meat in the experimental groups by 0.3-2.4%. The moisture binding capacity of muscle tissue as a percentage of total moisture in the 4th experimental group was higher than in the control by 6.3% (p less than 0.05). Higher fat content was observed in the 2nd and 4th experimental groups, which is more than in the control by 2.4-2.8% (p less than 0.001). The smallest fat percentage was found in the meat of Landrace pigs (3.7 ± 0.15%) and crossbreeds of L x LW (3.7 ± 0.15%). There were no significant intergroup differences in protein and ash content. Young animals of the 2nd and 4th trial groups tended to increase the caloric content of muscle tissue by 23.0-25.6 kcal (+19.0-21.2%) as opposed to purebred herd-mates.
