This paper presents the results of the investigation into the quantities of proteins and amino acids as well as their changes in the mushroom species: Boletus edulis var. edulis, B. edulis var. aereus and Cantharellus cibarius var. pallescens in many localities of the Toplice area in S.R. Serbia (Yugoslavia). The investigation has been carried out in relation to the species and variety, degree in the development of the fertile body and technologic processing. It has been proved that the greatest mass of proteins is made up of globulins and albumins.
