Improper storage of palay rice in the husk may cause loss of grain quality. The most important factors that can damage the grain in the event of improper storage area are dampness of the grain, environmental humidity of the storehouse and temperature, in addition to attack by insects, microorganism and rodents. This study was done in 1981 in the INIA central rice laboratory, with the aim of determining yield differences for whole polished rice and physical-chemical changes that occur in six varieties of palay rice when stored for 12 months at humidity content of 13, 14, 15 and 16, percent at temperatures of 0, 25 and 35 grades C, with and without relative humidity control. According to the results, the yield of whole polished grain decreased when stored for 12 months with a humidity content greater than 13 and at 25 and 35 grades, without controlling relative humidity. These yields change according to the variety. The least affected is Sinaloa A-80 and the most susceptible is Morelos A-70. When palay rice is stored at a relative humidity of 89 and at 0 and 25 grades, with a humidity content adjusted at 13, the yield of whole polished grain is constant for all varieties. The cooking qualities for all varieties and all treatments were better for stored rice than recently harvested rice
