Sweetpotato has considerable untapped potential as a nutrious food crop particularly for the poor and more vulnerable groups of society in developing countries. This paper analyzes the nutritional content of sweetpotato roots and leaves in both cooked (fresh) and processed forms. It highlights the high content of carotene and vitamin A of sweetpotato roots and leaves. Processed products are then discussed as well as extension/promotion efforts as means to broaden the crop's appeal and thereby encourage its greater use
