Designed to assist processors and retailers making the transition to large, lean lambs by providing a summary of current technical data dealing primarily with meat quality. It summarises factors affecting meat quality and attempts to indicate strategies that processors and retailers can adopt to present the consumer with a premium product. Strategies apply to all lamb products.
