Discusses issues relating to the production and processing of Elite lamb (a larger, leaner carcase animal), chiefly the assessment of opportunities and restraints within each sector of the production system. Both the production and the processing of this type of lamb is affected by attitudes to the new product, and understanding of these attitudes and the constraints they may produce is of particular interest in this study.
