A relationship between cholesterol concentrations in eggs and blood plasma of hens

Relationships between cholesterol concentrations in blood plasma of hens and cholesterol content in laid eggs were investigated. A total of 60 clinically healthy hens were examined in which the individual concentrations of plasma cholesterol varied within a large range of 3.55 to 10.25 mmol/l. In comparison with plasma cholesterol, cholesterol content in egg yolk varied within a relatively narrow range of 228.1 to 363.0 mg. A comparison of individual cholesterol concentrations in blood plasma and in yolk has shown that cholesterol concentration in yolk may be up to 14 times higher than that in blood plasma. Plasma cholesterol concentration is not in a direct relationship to yolk cholesterol concentration. It has also been confirmed by correlation analysis which helped to determine very low insignificant correlation coefficients for cholesterol concentrations in blood plasma and yolk.
