'The perfect pea' - an industry view of field peas for human consumption [Victoria]

A survey of Victorian buyers, traders and processors showed that the 'perfect pea' is large, spherical, uniform in size and colour, free of dimples and splits cleanly and easily. The colour of both the whole and split pea is bright and clean and varies according to market requirements.
