英语. Grapes thinning modifies musts composition. Density and reducing sugars amount increase in function of intensity of thinning, thus the alcohol content in wines increases in the same way. The reduced extract is higher in thinned trials than the control test, but no difference is noted in function of intensity of thinning. The pH is higher in the thinned 66% trials than, the control test in musts and in wines. The tartaric acid content of wines decreases in function of thinning intensity. The wines of thinned 50% trials have the best equilibrium, from the analytical point of view
显示更多 [+] 显示较少 [-]意大利语. Il diradamento dei grappoli ha portato ad una modificazione di alcuni parametri compositivi in mosti da uve raccolte a maturazione industriale. In particolare la densita' ed il contenuto zuccherino aumentano con l'intensita' del diradamento, cosi' come l'alcol nei vini finiti. L'estratto ridotto e' maggiore nelle tesi diradate rispetto al testimone, ma fra queste in modo non dissimile. Il valore del pH risulta piu' elevato, rispetto al testimone, nella tesi sottoposta a maggiore diradamento, fenomeno che permane anche nei vini finiti. Il tenore in acido tartarico nei vini risulta inferiore in funzione dell'intensita' del diradamento. Il diradamento al 50% conferisce, da un punto di vista analitico, un maggiore equilibrio ai vini
