Meat performance of extensively fattened bulls of different genotypes

An extensive fattening scheme involved bulls of F1 generation after three sires in all cases, belonging to the breeds Hereford (HRF), Limousine (Li) and Czech Pied (C), and after dams of the breeds Black-Pied (N) and Czech Pied (C) with below-average milk performance. Extensive fattening showed negative impacts through the old age of animals at slaughter. The level of nutrition and lower slaughter weight resulted in low fat deposition and higher share of bones. The sons after the sires of meat breeds had higher production of meat per 1 kg bones (HRF and Li 4.50 and 4.51 kg, resp., C 4.05 kg). The HRF bulls with the smaller body framework produced 0.96 kg of prime cuts per 1 kg of quality II meat (Li 1.07, C 1.02 kg). The largest eye-muscle area was determined in the sons of C cattle - 79.11 cm2 (Li 75.51, HRF 69.73 cm2). Very good quality of meat was confirmed by the value pH (5.70 to 5.78) and by color (25.13 to 25.96). The genotypes showed a significant difference in dry matter content (HRF 24.77, Li 24.57, C 23.81 %) and in fat content (HRF 2.54, Li 1.91, C 1.50 %) in an eye-muscle area sample. Insignificant differences were found out in crude protein content (3.51 to 3.59 %).
