Occurrence of fumonisins in foods

104 food products purchased from retail outlets in Switzerland were analysed for fumonisin B1 and B2 (FB1, FB2) by HPLC with fluorescence detection. In 52 corn-free products no detectable levels of fumonisins were found. 42 of 52 corn-based products were found positive for fumonisin. Corn grits and meal contained higher levels of fumonisins than popcorn, corn flakes and snacks. The mean level of FB1 nd FB2 in corn grits and meals was estimated 406 ng/g (14-3400 ng/g) and 95 ng/g (5-900ng/g). The average intake of fumonisins is estimated to be 2 ug per person and day in Switzerland, but according to the results, a considerable number of individuals might have an increased intake. So, a person, who weekly eats 400 g of corn contaminated with 1000 ng fumonisins per g, has an intake of 57 ug per day. For Switzerland imported corn represents the only important source of fumonisins. So, fumonisins do not seem to be an immediate health risk at the moment. Nevertheless a provisional limit in the range of 1000-2000 ng per g for the sum of FB1and FB2 is proposed.
