A method for production of "Solodovy" concentrate for soft drinks is developed. It involves blending the concentrate of kvass wort and lactic acid. The method differs in that a barley malt extract is introduced into the blend at the following ratio of ingredients, %: concentrate of kvass wort -7-11; barley malt extract - 85-89; lactic acid - 3-5. The blend is pasteurized at temperature 75-85 deg C for 40-80 min under continuous stirring. The proposed method provides the new base for soft drinks which is of high biological value
