The degradation of retinyl acetate under the influence of light and thermic radiation was studied. Under the given experimental conditions the basic differences between both processes were found. The thermodegradation of retinyl acetate is a simple binary process while its photodegradation is a more complicated system of subsequent reaction. The knowledge of thermic and photo stability of retinyl acetate, which is applied as a nutrient additive, can serve for the determination of basic principles for storage of fortified food products.
