Biogenic amines in Hungarian wines

英语. The aims of this project were to compare the analytical methods for determination of biogenic amines. It was investigated the biogenic amine content of Hungarian wines, the influence of the grape variety, the year and the production area on these parameters. It was also paid attention to the histamine and tyramine content, to analyze the effect of wine treatments (bentonite fining and active carbon treatment) on the histamine and tyramine concentration of wine and to study the relationship between the malolactic fermentation and the histamine concentration of wine. The most important result of this study from our point of view was that the histamine and generally the biogenic amine content depends on the wine technology, mostly the finishing treatments. The histamine and tyramine concentration measured in Hungarian wines were lower than the international limits

意大利语. Con la presente indagine sono stati confrontati i metodi di analisi per la determinazione delle ammine biogene dei vini. Si sono inoltre valutati gli effetti della cultivar, dell'annata e della zona viticola sul contenuto in ammine biogene dei vini ungheresi. L'indagine e' stata rivolta soprattutto al contenuto di istamina e tiramina. Tra i coadiuvanti tecnologici e' stato testato l'effetto della bentonite e del carbone attivo su istamina e tiramina, inoltre si e' valutato l'effetto della fermentazione malolattica sulla quantita' di questi composti. La considerazione piu' importante e' che il contenuto di istamina e in generale quello delle ammine biogene dipende soprattutto dalla tecnologia; e' emerso inoltre che il contenuto di istamina dei vini ungheresi e' molto inferiore al limite internazionale
