Physiological response of cabbage leaves (Brassica oleracea var. capitata) to stress of mechanical damage

Obtained results suggested that different mechanical damages (bruishing and shredding) of winter cabbage heads, followed by their short-term storage, induced various changes in their bioliogical quality and affected the senescene of cabbage tissue, however no visible signs of its deterioration were obseved. Considerable increase of total phenols and free proline contents were found in all treatments. Stress of bruishing affected a significant increase in ascorbic acid. The amino acid content as well as the activity of peroxidase were increased after short-term storage of cabbage heads
