The experimental material consisted of 8 crossbreds R3 (12.5 percent Polish Merino, 87.5 percent Suffolk) and 8 Suffolk's lambs. The evaluated group of crossbreds derived from the supplanting crossbreeding Polish Merino x Suffolk race. Slaughter, cutting of the carcasses, partial disection and measurements of the right half-carcasses were carried out according to National Research Institute of Animal Production. The content of muscule and fat tissues in half-carcasses were estimated by means of regression equations describe by Osikowski. The effect of the studied genotypes of lambs and sex on slaughter traits and carcass quality was generally small. The Suffolk lambs were characterized by statistically higher values of the high of loin eye, more favourable values of the fat layer over the loin eye, content of fat of muscule tissue. The R3 lambs' muscule had better sensors estimation of taste and water holding - capacity than pure bred
