Slaughter value of lambs classified according to the "EUROP" standards

The research were carried out on carcasses of 97 Merino lambs and two-stage hybrids Polish Merino with prolific and meat breeds, fattened intensively up to the body weight of 30-40 kg. It was performed the comparative analysis of slaughter values, carcass dimensions and meat quality of investigated lambs, classified according to standards EUROP on the ground of their conformation and musculature as well as fatness degree. The obtained results indicate that the evaluation of lamb carcasses quality with EUROP system, in their classification according to their conformation and musculature shows a significant convergence with the real differences in the carcasses quality, whereas in classification according to fatness - a clear convergence with the real content of fatty tissue in carcasses. No major diffrentiation of the meat quality according to the carcasses classification was noted
