Extrudates can be good source of alimentary cellulose, which is needed in daily human diet. Quality and quantity analysis of industrial extrudates were performed. These preparations can be used as gelling factors to the food. They content over 65 proc. of cellulose and improve the food quality in production of milk and fruit desserts, jams, juices, yoghurts and cottage cheeses
