Nutritional values of quick-frozen fishery products

Several samples of quick-frozen fishery products (cod, hake and plaice fillets, peeled shrimps, shucked clams and dressed little cuttlefish) from different firms of this sector were analysed for their nutritional value. The results of the analyses showed a high variability in lipid content for all products, in carbohydrate content for cuttlefish, clams and shrimps, and a rather uniform protein content in all products, except shrimps. The non homogeneity of the values for each product should be attributed mainly to the differences between the fish species used (even if the product has the same commercial name) and/or to the different types of processing

Sono stati determinati, in numerosi campioni provenienti da diverse ditte del settore, i valori nutrizionali dei seguenti prodotti ittici surgelati: filetti di merluzzo, di nasello e di platessa, gamberetti sgusciati, vongole sgusciate e seppioline pulite. In base all'esame dei valori riscontrati nei campioni di ogni prodotto, sono state rilevate elevate variabilita' del tenore lipidico in tutti i prodotti e del tenore glucidico nelle seppie, nelle vongole e nei gamberetti, mentre il tenore proteico e' risultato abbastanza uniforme in tutti i prodotti, ad eccezione dei gamberetti. La non omogeneita' dei valori relativi ad ogni prodotto e' ascrivibile principalmente alle differenze tra le specie ittiche utilizzate (anche se il prodotto ha la stessa denominazione commerciale) e/o ai diversi tipi di lavorazione
