In this work, tests were carried out showing the content of biologically active compounds on a brew made with classical extraction corresponding to the process of brewing infusions according to PN-ISO 3103 from Melissa Officinalis and semi-quantitative and qualitative analysis of the composition of the essential oil obtained from the starting raw material. The total polyphenol compounds, including flavonoids, were analyzed and the antioxidative activity was determined by the reduction of the DPPH radical. It has been shown that lemon balm has antioxidant activity expressed as percent inhibition in the value of 18.24 percent, moreover in the infusion of the test herb 21.5 mg of GAE / 100 ml of polyphenols were observed, including 15.7 mg / 100 ml of flavonoids. Semi-quantitative and qualitative analysis of the essential oil allowed to state 0.26 percent [V / m] of its content and to record 23 compounds present in the isolated oil. The main components are cariophilene oxide (20.63 percent), geranial (13.94 percent), neral (10.60 percent), E-caryophyllene (10.12) and citronellal (9.28 percent).
