Optimization of the formulation and technology of the puree-like semi-finished product from jerusalem artichoke and berry raw materials | Oптимизация рецептуры и технологии пропюреобразного полуфабриката из топинамбура и ягодного сырья

Scientific and practical studies have been conducted to substantiate the formulation and technology of a puree-like semi-finished product from Jerusalem artichoke tubers and black currant berries. The complex of indicators characterizing the quality of the developed products such as viscosity, complex organoleptic index, the content of biologically active ingredients, namely inulin, pectin and ascorbic acid has been under study. Regression analysis was carried out by means of Statistica v.10, the solution of the mathematical programming problem was carried out by means of MathCAD v.15. To identify the optimal technological modes for the production of puree-like semi-finished products, three technological schemes were developed using traditional as well as innovative (Thermomix TM6) thermal equipment. As the test samples, a combined puree with different ratios of ingredients was prepared: jerusalem artichoke share varied from 20 to 80%, black currant berries – from 10 to 30%, jerusalem artichoke syrup – from 10 to 40%. It is established that the use of scheme 3 assuming thermomixing is optimal for the preparation of a puree-like semi-finished product. The optimal ratio of berries, jerusalem artichoke and syrup is 40:50:10. New information has been obtained on the content of biologically active substances in the puree-like semi-finished product. An assessment of the quality and safety indicators of the developed products is made. The product developed can be used at creating an assortment of flour confectionery and culinary products intended for different population categories as an enriching component.

俄语. Проведены научно-практические исследования для обоснования рецептуры и технологии пюреобразного полуфабриката из клубней топинамбура и ягод черной смородины (ПП). В комплекс показателей, характеризующих качество разрабатываемой продукции, входили вязкость, комплексный органолептический показатель, содержание биологически активных ингредиентов (инулина, пектина и аскорбиновой кислоты). Регрессионный анализ проводили посредством Statistica v.10, решение задачи математического программирования – посредством MathCAD v.15. Для выявления оптимальных технологических режимов производства ПП были разработаны три технологические схемы с использованием традиционного, а также инновационного (Thermomix TM6) теплового оборудования. В качестве опытных образцов приготавливали комбинированное пюре с различными долями ингредиентов: топинамбура – от 20 до 80%, ягод смородины черной – от 10 до 30%, сиропа топинамбура – от 10 до 40%. Установлено, что оптимальным для приготовления ПП является применение схемы 3 (термомиксинг). Выявлено оптимальное соотношение ягод, топинамбура и сиропа – 40:50:10. Получены новые сведения о содержании биологически активных веществ в ПП. Проведена оценка показателей качества и безопасности разработанной продукции. ПП может быть использован при разработке ассортимента мучной кондитерской и кулинарной продукции, предназначенной для различных категорий населения, в качестве обогащающего компонента.
