Study of the mashing mode effect on indicators of wort obtained with the use of chicory | Влияние режима затирания на показатели пивного сусла, полученного с применением цикория

The results of 2 experiments to study the effect of the modes of mashing malt (ML) and its partial replacement with chicory concentrate (CC) on the physicochemical parameters of the 1st wort (for beer) are presented. During the 1st experiment, 4 experimental samples (ES) were prepared: when using the infusion mashing mode, the ratio of ML:CC was 100:0 (ES 1) and 90:10 (ES2); with a single-boil mashing mode with boiling of the entire thick part of the mash, the ratio of ML: CC was also 100:0 (ES 3) and 90:10 (ES 4). It was found that the dynamic viscosity and pH of the wort in ES2 and ES4 (ES with CC) was lower than in ES1 and ES3 (1.336 and 1.425 vs. 1.341 and 1.649 Pa*s; 5.85 and 5.82 vs. 6.14 and 6.08 pH units), and the content of reducing substances was higher (86.36 and 70.11% vs. 84.23 and 63.33%). The introduction of CC into the malt bill makes it easier to filter the mash, which helps to reduce the time and energy costs in beer production. In the 2nd experiment, the effect of the proportion of CC in the malt bill (0, 3, 5, 10 and 15%) on the physicochemical properties of the wort under a single-boil mashing mode with boiling of the entire thick part of the mash was studied. It was shown that the increase in the proportion of CC in the malt bill from 0 to 15% contributed to a decrease in dynamic viscosity from 1.649 to 1.403 Pa*s, in pH values from 6.08 to 5.80 pH units and an increase in the mass fraction of reducing substances from 63.33 to 73.18%. It is concluded that the partial replacement of ML with CC in the mash is quite reasonable, and the optimal proportion of CC in the mash when preparing wort by single-boil mashing is 3-5%.

俄语. Представлены результаты 2 экспериментов по изучению влияния режимов затирания солода (СЛ) и частичной его замены на концентрат цикория (КЦ) на физико-химические показатели 1-го сусла (пивного). При проведении 1-го эксперимента готовили 4 опытных образца (ОО): при использовании настойного режима затирания соотношение СЛ:КЦ составляло 100:0 (ОО1) и 90:10 (ОО2), при одноотварочном режиме затирания с кипячением всей густой части затора соотношение СЛ:КЦ также составляло100:0 (ОО3) и 90:10 (ОО4). Установили, что динамическая вязкость и величина pH сусла в ОО2 и ОО4 (ОО с КЦ) была ниже, чем в ОО1 и ОО3 (1,336 и 1,425 против 1,341 и 1,649 Па*с; 5,85 и 5,82 против 6,14 и 6,08 ед. pH), а содержание редуцирующих веществ – выше (86,36 и 70,11% против 84,23 и 63,33%). Введение КЦ в засыпь позволяет облегчить фильтрование затора, что способствует сокращению затрат времени и энергии при производстве пива. Во 2-м эксперименте изучали влияние доли КЦ в засыпи (0, 3, 5, 10 и 15%) на физико-химические свойства сусла при одноотварочном режиме затирания с кипячением всей густой части затора. Показали, что увеличение доли КЦ в засыпи с 0 до 15% способствовало снижению динамической вязкости с 1,649 до 1,403 Па*с, величины pH с 6,08 до 5,80 ед. pH и росту массовой доли редуцирующих веществ с 63,33 до 73,18%. Сделан вывод, что частичная замена СЛ на КЦ в заторе является вполне обоснованной, а оптимальная доля КЦ в заторе при приготовлении сусла методом одноотварочного затирания составляет 3-5%.
