Influence of temperature treatment modes on the aromatic profile of fruit brandy | Влияние температурных режимов обработки на ароматический профиль плодовых водок

英语. Fruit brandy (FB) produced on the basis of fruit distillates are of interest to consumers due to the full-bodied aroma and taste inherent in these alcoholic beverages. The volatile components present in these distillates are a complex of aroma-forming substances that pass from the feedstock, as well as formed as a result of complex enzymatic and non-enzymatic processes at all production stages. The optimal cold treatment mode of FB was determined by studying the influence of temperature on their aromatic profile. The objects of the study were 3 experimental samples of FB prepared at the All-Russian Scientific Research Institute of Brewing, Beverage and Wine Industry in the laboratory. The experimental samples were cold-treated under 3 temperature conditions: –8…–10 deg. C (mode I); –12…–14 deg. C (mode II); –18…–20 deg. C (mode III). The determination of the qualitative and quantitative composition of volatile components was carried out by gas chromatography. It has been found that treatment at a lower temperature (mode III) leads to a significant decrease in the concentration of higher and aromatic alcohols, as well as higher fatty acid esters, compared with milder modes I and II. Changes in the concentration and ratio of groups of volatile components in the experimental samples affected the intensity and nature of their aroma, and also taste. The results of the organoleptic analysis revealed an increase in the tones of fresh fruit and floral hints in the samples treated with cold at a temperature of –12…–14 deg. C. In addition, they have become more harmonious and purer in aroma, without excessive fusel hints and grassy tones. The constructed aromatic profiles showed that treatment at a lower temperature led to a weakening of floral and fruit notes in the aroma and an increase in fusel notes. It has been established that the temperature of -12...-14 deg. C is best suited for the treatment of FB from the position of improving the structure of their aromatic profile.

俄语. Плодовые водки (ПВ), производимые на основе фруктовых (плодовых) дистиллятов, представляют интерес для потребителей за счет присущего этим спиртным напиткам богатого аромата и вкуса. Летучие компоненты, присутствующие в этих дистиллятах, представляют собой комплекс ароматобразующих веществ, переходящих из исходного сырья, а также образующихся в результате сложных ферментативных и неферментативных процессов на всех технологических этапах производства. Определяли оптимальные режимы обработки ПВ холодом, исследуя влияние температуры на их ароматический профиль. Объектами исследования служили 3 опытных образца ПВ, приготовленные в лабораторных условиях. Опытные образцы обрабатывали холодом при трех температурных режимах: –8…–10 град. С (режим I); –12…–14 град. С (режим II); –18…–20 град. С (режим III). Определение качественного и количественного состава летучих компонентов проводили методом газовой хроматографии. Было установлено, что обработка при более низкой температуре (режим III) приводит к существенному снижению концентрации высших и ароматических спиртов, а также эфиров высших жирных кислот, по сравнению с более мягкими режимами I, II. Изменение концентрации и соотношения групп летучих компонентов в опытных образцах отразилось на интенсивности и характере их аромата, а также вкуса. Результаты органолептического анализа выявили усиление тонов свежих фруктов и цветочных оттенков в образцах, обработанных холодом при температуре –12…–14 град. С. Кроме того, они стали более гармоничными и чистыми в аромате, без излишних сивушных оттенков и травянистых тонов. Построенные ароматические профили показали, что обработка при более низкой температуре приводила к ослаблению цветочных и фруктовых оттенков в аромате и усилению сивушных оттенков. Установлено, что температура –12…–14 град. С лучше всего подходит для обработки ПВ с позиции улучшения структуры их ароматического профиля.
