Today, trans fats have taken a leading place in the food market. Manufacturers have increasingly started to use trans fats in the composition of food products, because it is a very cheap raw material and is more profitable than natural fats. It is worth noting that the content of trans fats in food can be excessive, and not only the quantity, but also the qualitative composition is very important. The aim of this work is to assess the health risk of trans-fats consumption, to identify food products with high trans-fat content on the market of the Republic of Moldova.
