Comparative analysis of the composition of wild berries as enriching food ingredients | Сравнительный анализ состава ягод дикоросов как обогащающих пищевых ингредиентов

英语. The research purpose is to study and to compare the composition of secondary products of wild berry processing as promising enriching food ingredients. The material composition of crowberry, red bilberry, and cranberry pomace that are waste products of obtaining concentrated direct pressing juice according to the low-temperature technology has been studied using standardized methods. To preserve the properties and ensure high processing quality of pomace as ingredients of food systems, they were subjected to low-temperature infrared drying. It has been established that the pomace of wild berries has a different composition depending on the species. So, the crowberry pomace are characterized by a higher content of fibers, nitrogenous substances, minerals, including calcium, iron, manganese, copper, and zinc in comparison with pomace from red bilberries and cranberries; they have a significantly higher content of anthocyanins of about 20%. According to the content of total sugars, red bilberry pomace (19.64%) is distinguished. The cranberry pomace extracts contain a lot of organic acids; titrated acidity of them reaches 195.6 mg/g. In the crowberry pomace, dietary fibers and anthocyanins are present in increased amounts, in the crowberry, red bilberry, and cranberry pomace there are calcium, copper and manganese. In general, dried pomace of the studied berry species can be considered as food ingredients for designing enriched and/or functional foods.

俄语. Цель исследований – изучение и сравнительный анализ состава вторичных продуктов переработки ягод дикоросов как перспективных обогащающих пищевых ингредиентов. Стандартизированными методами изучен вещественный состав выжимок шикши, брусники, клюквы - отходов получения концентрированного сока прямого отжима по низкотемпературной технологии. Для сохранности свойств и обеспечения технологичности выжимок как ингредиентов пищевых систем их подвергали низкотемпературной инфракрасной сушке. Установлено, что выжимки из ягод дикоросов имеют различный состав в зависимости от вида. Так, выжимки из ягод шикши характеризуются более высоким содержанием клетчатки, азотистых веществ, минеральных веществ, в том числе кальция, железа, марганца, меди и цинка в сравнении с выжимками из брусники и клюквы; имеют существенно более высокое, около 20%, содержание антоцианов. По содержанию общих сахаров выделяются выжимки из брусники (19,64%), органических кислот – выжимки из клюквы; их титруемая кислотность достигает 195,6 мг/г. В выжимках шикши в повышенном количестве присутствуют пищевые волокна и антоцианы, в выжимках шикши, клюквы и брусники - кальций, медь и марганец. В целом, высушенные выжимки изученных видов ягод могут рассматриваться как пищевые ингредиенты для проектирования обогащенных и/или функциональных пищевых продуктов.
