Food in contemporary society | Emerging patterns

Abstract: Papers from a symposium that focused on the emerging food patterns in contemporary society (with regards to consumer dietary patterns and practices of the food industry) are presented. Government's role as it affects policy, food and nutrition surveys, USDA's Daily Food Guide, and present eating patterns was analyzed. Industry spokesmen discussed their concerns regarding nitrosamines, high fructose corn sweeteners, and dietary fiber in processed foods. Other topics included energy, surgical intervention, stress-induced eating, and endorphins and enkephalins associated with obesity, along with new research on iodine.
