Contents of dietary fiber in some Japanese foods and the amount ingested through Japanese meals

Extract: Procedures for dietary fiber (DF) determination were applied to some Japanese foods. Food samples selected included: some vegetables and fruits, several edible seaweeds, non-glutinous brown rice, polished rice, and the meal under administration on catering service. Analyses were made by modifying the methods of Southgate and Van Soest. For the analysis of samples containing much starch, starch must be removed by amylase and glucoamylase digestion. The DF content of Japanese seaweeds was about 12-44%. These values were 1.2-3.9 times as high as the neutral detergent fiber (NDF) content. Some parts of the undigestible carbohydrates in seaweeds as DF may be dissolved in NDF reagents. DF content of non-glutinous brown rice was 5.5-6.9%, while that of polished rice decreased to 1.4-1.9%. The ingested amount of DF though meals was about 15-19 g per day, which was 2-3 times as high as the value of crude fiber. (author/wz)
