Abstract: To help those involved with feeding preschool children in family day care homes, child care centers and nursery schools, this cookbook offers recipes that fit into the Child Care Food Program meal pattern requirements. Each recipe indicates the food groups(s) and quantity of the meal components, as well as the yield and serving size based on the nutrient requirements of a 3-6 year old. Most recipes have been modified in salt and saturated fat content. Breakfast ideas, fruits/vegetables, meat/meat alternates, breads, main dishes, snacks, cooking terms and menu suggestions comprise topics addressed. A list of guidelines for feeding children and a chart of daily recommended food and nutrition needs of children are included.
