Abstract: As the consumer becomes more and more separated from the sources of the food he eats, the need for information concerning food processing, packaging and manufacturing becomes more vital. Over 200 types of supermarket products are analyzed to provide this information: possible toxic effects and allergies, nutritional value, validity of advertising claims, food composition and many other relevant factors. For example, hot dogs actually declined in protein content (20% to 12%) and increased in fat (19% to 28%) between 1937 and 1972. Chickens and turkeys are injected with substances which retain water, thereby increasing weight. Hamburger was found to have unacceptably high levels of coliform bacteria in 9% of samples analyzed in 7 cities. Categories of foods covered include cereals, fruits and vegetables, dairy products, meats, fats and oils, beverages, sweets, and other foods.
