Proximate and amino acid composition of cowpea (Vigna unguiculata, Walp) protein concentrate prepared by isoelectric point precipitation

A cowpea protein concentrate (CPC) was extracted from decoated seeds, by the method of isoelectric point precipitation using dilute hydrochloric acid. Proximate analysis revealed that the CPC had a protein content (N X 6.25) as high as 82%. Amino acid analysis indicated that the profile of amino acids in CPC was similar to that found in the raw material The potential use of CPC to supplement foods that are low in protein is discussed.
