Improved fermentation process for producing torula yeast

An advanced continuous fermentation process can produce torula yeast (Candida utilis) from ethanol, sucrose, or molasses, to be used as a high-quality protein supplement. This process is a high cell density, direct-dry system in which sterile minimal solutions and substrates are continuously fed to the fermenter. The fermenter effluent is pasteurized and spray dried, and the only waste streams are carbon dioxide and water vapor. The development, details, yields and advantages of this process are described. Specific information on the growth of this yeast from ethanol and carbohydrates are provided, as well as data reflecting the nutritional value and nutrient contents of the yeast. The crude protein content of yeast grown on ethanol is about 57%. (wz)
