Dairy product purchases by southern households

A representative sample of 1,061 households from 12 southern states provided information on use of dairy products. Economic and demographic variables were analyzed as well as the nutrient content for all cheeses, ice cream and ice milk, fluid milks, and milk products. Calories, protein, calcium, total fat, unsaturated and saturated fats, and cholesterol were calculated and compared to recommended intakes. It was found that purchasing habits were influenced by income, education and occupation of household, employment status of homemaker, and race; for example, white households bought more cheese, milk and milk products than non-white households, and the same trend was seen for higher income and education households. Most dairy consumption was in the form of fluid milks, and changes from whole milk to skim or low-fat milk was not noted. Total dairy product purchases contributed significantly to the advised nutrient intake levels of these southern households.
