Louisiana school food services has more than 1,000 employees and serves 65,000 meals daily. The food service has the largest budget of any state in the union and boasts a 90% participation rate. Menus are planned, on a 20-day cycle, and center around the cultural food patterns of the area. Disposables are used almost entirely. Monthly promotions are planned annually and all decorations are procured from a single service manufacturer. The food service department is involved in a breakfast program, a summer food service program, and is a strong advocate of nutrition education. The system employs 2 people to plan classroom projects in nutrition education to mesh closely with courses in home economics, science, health and physical education. Ethel Ott, the director, has taken a vigorous stand against the increase in prices for school meals necessitated by the budget crunch. She feels that since students receive free textbooks to help them learn they are also entitled to free food since hungry children can't learn, and may become discipline problems. (emc)
